Northern Indian Cuisine with Khalil Akhtar

In this class, we focus on a richly flavoured rice dish called yakhni pulao. In much of Northern India and Pakistan, the dish is considered a vital part of weekend meals.  The pulao will be accompanied by nargisi kofta, a sort of Indian take on the scotch egg.  We will also talk about the building blocks of good raita. In the introductory class, we ended the meal with a simple semolina halva. In this one we make a festive dessert, sheer kurma.

Menu:

- yakhni pilau (rice, chicken and chickpeas cooked in rich broth)
- nargisi kofta (egg stuffed meatballs)
- assorted raita
- naan bread
- sheer khurma (milk and noodles with dates)
