Innisfree Farm harvested a whopping 2300 bulbs of organic garlic this July and the barn, decked to the rafters with drying bulbs, has been dubbed �The Garlic Cathedral�. When garlic is pulled from the ground, the heads must cure until the skins are as dry as paper. Thierry Vrain, co-owner of the farm, and the farm interns then separate the cloves and plant the largest out in early October for next year�s crop.

The remaining plump and fragrant cloves are for eating, and this delicious abundance has inspired The Garlic Lover�s Feast. This dynamic kitchen practicum and culinary education class is a highlight of the 2013 Food as Medicine Series held annually at Innisfree Farm near Courtenay BC.

Join medical herbalist Chanchal Cabrera and chef Joseph Forest to learn about, sample and celebrate all things garlic. The three-hour evening class promises to be a lot of fun as this workshop will have you pondering, savouring and appreciating garlic as you�ve never done before.

Along with plenty of garlic-showcasing sampling, from appetizer through dessert, Chanchal and Joseph will share the extensive history, science and practical use of garlic as a culinary and medicinal powerhouse for your kitchen pharmacy.

Revered by ancient Romans as an aphrodisiac and renowned as a powerful medicine by herbalists today, garlic is also reviled by some as the pungent �stinking rose�. Though arguably best known for its reputed anti-vampire qualities, the healing power of garlic passes scientific scrutiny.

Repeated studies confirm it as potently anti-bacterial, anti-viral and anti-fungal and it shows promise in treating influenza as well as infections, including those that are antibiotic�resistant, and septicemia.
