A chance to learn all about one of the most mag�nif�i�cent fish of the Pacific North�west. With Bill Jones, author of Salmon the Cook�book and expert on preparing and cel�e�brat�ing these beau�ti�ful crea�tures.
This is a hands-on class where we will work through a vari�ety of dishes in a delicious and informative afternoon spent in the Deer�holme Farm kitchen.
- Salmon types, and sourcing
- Salmon butch�ery, debone�ing, skinning
- Salmon tar�tar with wild herbs,sumac, pita chips
- Smoked Salmon with fire�weed honey glaze
- Planked Salmon with Mediter�ranean flavours
Cost: $100 / per�son (plus tax). Includes all mate�ri�als, prod�ucts, and a meal we pre�pare in class. Hands-on cook�ing class where stu�dents do the cooking.
