Mushroom Dinner � Spain and Portugal

Join us for an unfor�get�table mush�room din�ner based on the foods of Spain and Por�tu�gal. Great local ingre�di�ents will be woven into the din�ner paired with the earthy and robust flavours of fall. We should have an amaz�ing selec�tion of mush�rooms to pre�pare this din�ner, typ�i�cally using up to 20 vari�eties of fungi.


Canapes:

House-smoked Chorizo with creamed kale, chanterelles, cur�rants and leeks
Coca (flat�bread) with roasted pep�pers and assorted wild mushrooms


Dishes:


Baked egg�plant with porcini bechamel and shaved cured ham
Asturian roasted squash soup with cau�li�flower fun�gus, chest�nut salsa
Pasture-raised chicken braised in cider, wild mush�rooms and whole gar�lic � served with baked Valen�cia rice
Chocolate-orange creme caramel with port poached pears, caramelized almond crunch
