Bitterness is crucial to taste and essential for good health, but we think of it negatively and try to eliminate from our food. Yet we learn to love coffee and tea and still hate Brussels sprouts. Why is our sense of taste so quirky?

Taste is much more than our tongue and sense of smell. Every sense is important, and external influences from the background music to the shape of our plate influence how we taste.

Why do Asian and Italian cultures embrace bitterness, while North Americans prefer sugar and salt? And, why are some of us more sensitive to bitter tastes?

Learn all about bitterness, its role of in the flavour spectrum and how you can exploit and harness it in the kitchen. This tutored tasting accompanied by a selection of bitter dishes will have you craving bitter. Cooking is about balancing tastes, and understanding bitterness is vital for cooks and anyone who eats.
