Introduction to Indian Cuisine with Khalil Akhtar

Khalil will explain the basic techniques, equipment, sourcing and spices required to create a multi-faceted north Indian meal. The class will be a combination of demonstration and hands-on learning with plenty of opportunities for questions and answers. The day will culminate in a satisfying communal feast featuring some of the iconic dishes of Northern India and Pakistan.
Menu:
- Local Vegetable Pakoras
- Kashmiri Lamb Curry with turnips and their greens (Shalgam Gosht)
- Lentil Curry (Dhal)
- Cucumber Raita with mint and lemon basmati rice, naan and assorted Indian pickles
