"Chefs Across the Water" at Hastings House Country House Hotel on Salt Spring Island

Hastings House Country House Hotel is delighted to announce another season of "Chefs Across the Water". The 5th Annual guest chef program brings distinguished chefs to the Hastings House kitchen for a series of gastronomic island adventures. This year, Mission Hill�s Executive Winery Chef, Chris Stewart, will highlight wine country cooking using the freshest, locally grown, in-season ingredients. The first "Chefs Across the Water" dinner of the 2014 season takes place on Monday, June 16.

Originally from the Maritimes, Chef Stewart is looking forward to bringing a taste of the Okanagan and getting back to the ocean, �My mind is set on seafood. Once the primary protein has been decided, I will tailor dishes that work to build a memorable menu incorporating our award winning wines and locally caught seafood.� He�s also looking forward to working alongside Hastings House Executive Chef Marcel Kauer, �Chef Kauer and the team at Hastings House carry a reputation for amazingly fresh, creative and sustainable food. The name is well known across the country.�

Hastings House General Manager, Adrienne Parks, says by mid-June an abundance of ingredients will be available direct from the kitchen garden, �We have an extensive garden on our 22 acre estate that yields a wide variety of greens, vegetables, edible flowers, fruits and herbs.� Parks adds guest chefs put their personal spin on island flavours, �It�s quite a journey to watch as new chefs explore the property and take in the culinary experience that extends beyond the kitchen.�

With only 75 seats available, diners are encouraged to book early. Chef Chris Stewart has an international resume, not only working at some of the most illustrious kitchens in the world, but he has also been part of a culinary team that cooked a private dinner at Windsor Castle for Queen Elizabeth.

The aim of the Chefs Across the Water program is to raise awareness of the pleasure, as well as health and economic benefits, of using local, organic and sustainable ingredients, despite the broader availability of ingredients from around the world.

Proceeds from Chefs Across the Water events go towards Salt Spring Agricultural Alliance's effort to establish a cold storage produce and production facility. So far $3000 has gone towards the now operational Salt Spring Island Abattoir. Hastings House Country House Hotel is proud to contribute to these and other worthwhile projects to support island farmers and livestock producers who in turn provide the dining room with the freshest, highest quality ingredients its loyal patrons deserve.
