Vancouver Island has always been spoilt with a vast and dependable bounty of meaty salmon and huge halibut, often ignoring many of the other fish that are abundant in our waters. While we indulge in regular meals of salmon and halibut many local diners are missing out on a wide array of fish that we either ship straight to the European market - where they are highly sought after, or we ignore them altogether. This is not a sustainable dining or fishing trend on Vancouver Island. Join me as I show you some of the diverse, interesting and delicious fish around our shores, and how you can incorporate these into your home cooking. I am looking very forward to serving all of these fish to you.
