In trib­ute to the local Big Leaf Maple Syrup Fes­tival, Deer­holme Farm will be pre­sent­ing a spe­cial menu of treats based on the unique island treat. Although based on a sweet sap, our menu will explore the blend­ing of sweet, sour, spicy, salty and umami flavours.

Maple-smoked Sock­eye Salmon

Maple-caramalized onion tarte with pep­pered local goats cheese



Ter­rine of Chicken, soy, maple and leeks – served with med­lar mus­tard sauce

Pan-fried Oys­ters with a maple-lemon reduc­tion, served with win­ter greens and fresh gar­lic noodles

Braised Lamb osso bucco (shanks) in a maple, red wine and spice sauce – served with truf­fle mashed pota­toes and celeriac

Big Leaf Maple creme caramel, with maple gin­ger snaps, rose­hip sauce
